Ingredients: 

  • 6 pears, peeled and stems left on

  • 1 bottle of white wine

  • 1 cup sugar

  • 1 cinnamon stick

  • 1 vanilla pod, split

  • Crème fraiche, for garnish 

Instructions:

  1. Pour enough of the wine into a medium size pot to cover the pears, but do not add the pears.  Add the sugar, cinnamon stick and vanilla pod.  Bring the mixture to a simmer.

  2. Peel the pears, leaving them whole with the stems on.  

  3. Place the pears in the simmering liquid and poach for about 1-1 1/2 hours.  Remove the pears and place on a cutting board. Continue to cook the wine until it thickens and reduces by two-thirds.  

  4. To serve: place one pear into a shallow soup bowl; spoon some of the poaching liquid on top, and garnish with a dollop of crème fraiche.
