Roasted Salmon with Grape Tomatoes, Herbs and Aged Balsamic
Serves 4
Ingredients:
4 - 8 ounce pieces of salmon filet
2 teaspoons kosher salt
Freshly ground black pepper
1 teaspoon dried oregano
1 cup basil leaves, cut into chiffonade
2 medium size garlic cloves, chopped
1/3 cup aged balsamic vinegar
1/4 cup extra-virgin olive oil
1 1/2 pints grape tomatoes, rinsed
1/4 cup plain bread crumbs
Instructions:
Preheat the oven to 400 degrees F.
Line a baking sheet pan with parchment paper.
Season the salmon with the kosher salt and freshly ground pepper.
Sprinkle the oregano over the salmon.
Drizzle some of the olive oil and vinegar over the salmon, and massage on both sides of each filet.
Place the tomatoes into a small bowl, and drizzle some of the vinegar and olive oil onto the tomatoes, and coat evenly.
Transfer the tomatoes onto the baking sheet pan, and place the prepared salmon filets on top. Sprinkle half of the torn basil leaves all over the the salmon and the tomatoes.
Roast the salmon for about 15 minutes, or until just cooked through.
During the last 5 minutes of cooking, sprinkle the bread crumbs on top of each filet. Return to oven to finish roasting.
Remove the fish from the oven; allow to slightly cool.
Drizzle all over with more balsamic vinegar; garnish with remaining basil and serve. Make it stand out.
